1. CafeSing EPEE Basket Is a Foundational Tool for Espresso

A foundational tool makes one variable more consistent and easier to compare within a process.

Espresso is basically a black-box game. Many variables happen at once. A semi-automatic espresso machine is a foundational tools for controlling those variables. For example, a traditional 9-bar espresso machine gives you relatively consistent pressure + temperature. A pressure-profiling coffee machine can divide the shot into different stages and give you a certain level of consistency in pressure + temperature during each stage.

The CafeSing EPEE Thick-Steel Espresso Basket is another foundational espresso tool. EPEE Basket comes in three flow rates. Its thick walls, thick base, straight walls, flat bottom, support ring, precision holes, and long extraction hole path are all designed to reduce uncertainty inside the espresso black box. Keep everything else the same and change just one variable—the number of holes in the basket. This gives you a much clearer comparison. Once the EPEE basket changes the espresso flow rate, the flavor difference becomes easier to notice. You can actually taste the subtle effect of flow rate instead of having that difference buried under a pile of other variables. Fix the variables. Change one thing. Taste the difference.

 

2. CafeSing EPEE Basket Compatibility & Installation

 

Compatibility

The CafeSing EPEE basket has a 58.6mm inner diameter and fits espresso machines with 58mm group heads. For the best fit, we recommend using it with a 58mm bottomless portafilter with vertical basket-retaining grooves, or pairing it directly with the CafeSing COD All-Steel Portafilter.

Installation

EPEE is a large-diameter precision basket. The tight retaining spring that comes standard with most portafilters can be difficult to fit around it. Inside the EPEE package, you'll find a silver bag containing a looser retaining spring. Follow the diagram and video to replace the original tight spring in your portafilter with the looser spring, then snap the CafeSing EPEE basket into place.

Modification

The looser basket-retaining spring lets you install and remove the large-diameter EPEE basket easily with one hand. So the EPEE basket may have a slight amount of play after installation instead of being locked completely tight; that's normal.

You can modify a loose basket-retaining spring into a tighter one. This helps keep large-diameter EPEE baskets from being shaken out of the portafilter groove when you knock out the puck.

Straighten the bend at Point ① to form one raised locking ridge. If you want an even tighter spring, straighten the bend at Point ② to form a second raised locking ridge.
